Discover the secret to the best bolognese sauce with this authentic Italian recipe. Made with fresh minced meat, San Marzano tomatoes and a touch of red wine, slowly simmered into a rich, full-bodied sauce full of flavor. Perfect for spaghetti bolognese, lasagna or tagliatelle.

A simple recipe with big results, pure Italian on your plate. Ideal for those who want to make the ultimate homemade bolognese sauce that surprises everyone.

Step 1 | Prepare the tomato base

Cut a small cross in the bottom of each tomato. Dip them in boiling water for 30 seconds, then place them directly in a bowl of ice water for 30 seconds. Remove the skin. Next, heat a splash of olive oil in a pan and add the tomatoes. Let this simmer gently for about 30 minutes. Then puree the sauce with a hand blender until smooth; this will ensure a rich, concentrated flavor later.

Step 2 | Fry the minced meat

Heat a generous splash of olive oil in a large skillet. Fry the minced meat over medium-high heat until nicely browned. Scoop the meat out of the pan and set aside.

In the remaining fat, sauté the onion and garlic for about 8 minutes. Add the carrot and celery and fry briefly.

Step 3 | Complete the sauce

Add the San Marzano tomato sauce to the vegetables. Mix in the sugar and dried herbs and cook for another 2 minutes.

Pour in the red wine and milk, crumble the bouillon cubes over the pan and stir well. Finally, add the fried minced meat back in.

Step 4 | Let the sauce simmer gently

Now let the sauce simmer gently for at least 5 1/2 hours on low heat with the lid slanted over the pan. Stir occasionally so that nothing cooks. Add salt and pepper if necessary. When the sauce becomes completely dry, add a little water.
