Tomatoes + burrata = match made to be. This simple recipe is worth trying out! Want to use this amuse bouche for on the drinks board? Then use San Marzano tomatoes. This tomato has less moisture than other tomatoes and, as a result, the cocktail board will not get wet.

Step 1
Start by making the fresh pesto. This can be done with a food processor or a mortar and pestle.
Caution! The steel blades of a food processor can cause basil to oxidize. This is why a mortar is often used.
Step 2
Toast the pine nuts so that they are golden brown. Then mix or mash together the basil, pine nuts, Parmesan cheese, garlic and olive oil.
Step 3
Keep a few basil leaves aside for garnish. Don't have time to make the fresh pesto yourself? Then buy fresh pesto from the supermarket.
Step 4
Then slice the tomatoes horizontally (about 1 cm). Tear the burrata into pieces and place it on a slice of tomato.
Step 5
Garnish with the fresh pesto and crema di balsamico. Season with salt and pepper. Top the amuse with two basil leaves.
