Preparation

Step 1

Make the sauce: Toast the hazelnuts in a dry pan. Set aside 10 grams of hazelnuts for later use. Leave the remaining hazelnuts in the pan.

Step 2

Add the vegetables: Coarsely chop the tomatoes and peppers and add them to the pan along with some paprika. Fry everything for about 4 more minutes.

Step 3

Blend the sauce: Put the mixture in a blender (or use a tall measuring cup with a hand blender) and add the honey. Blend until a coarse sauce forms.

Step 4

Season the sauce to taste: Return the sauce to the pan and season with salt, pepper and chopped parsley. Let the sauce simmer on a very low heat for a few more minutes so that it can be served lukewarm.

Step 5

Prepare the halibut: Pat the halibut dry and sprinkle with salt and pepper.

Step 6

Fry the parma ham: Place the parma ham in the oven for 5 minutes until crispy. (You will need about 3-4 slices of ham per piece of fish.)

Step 7

Fry the fish: Heat a generous splash of olive oil in a pan until well heated. Add the sprigs of oregano and thyme and sauté briefly. Keep them in the pan. Turn the heat to medium-high and add the halibut. Fry for about 8-10 minutes on all sides until browned and cooked, depending on the thickness of the fish.

Step 8

Chop the hazelnuts: Coarsely chop the set aside hazelnuts.

Step 9

Serve the dish: Divide the sauce among the plates and place the halibut on top. Top the fish with the crispy parma ham and fried herbs. Top with the chopped hazelnuts.
