Step 1
Preheat the oven to 190 degrees Celsius. Cut the eggplant into slices about 1 cm thick.
Step 2
Place the slices on a baking sheet lined with baking paper. Brush the slices with olive oil on both sides. Sprinkle salt, pepper, thyme, and dried basil over the eggplant. Bake in the oven for 20-25 minutes until the eggplants are golden brown and tender.
Step 3
Meanwhile, cut the tomatoes into small cubes. Finely chop the fresh basil and add to the tomatoes. Squeeze the clove of garlic and mix it into the tomato mixture. Add a dash of olive oil and a pinch of salt and pepper. Mix well.
Step 4
Place the burrata in the center of a plate and pull it apart slightly. Spread the warm, fried eggplant over the burrata. Spoon the tomato mixture on top. Garnish with a leaf of fresh basil and an additional drizzle of olive oil, if desired.
